Beach Ball Workout

In between catching up, I’m going to push forward!

I’ve been NEEDING to get in shape (hence the name of the board) and did a full workout today – yay me!  I’m trying to resist the urge to celebrate with junk food lol.

I had to click through a few links to actually get to a workout but once I did, I found one I loved.  It definitely works you harder than you think it will just looking at the pictures!

The pin I had on my board was linked to a site that didn’t work anymore, I clicked around some and found that the girl had moved the list of workouts to this new link: http://happy-healthy-strong.tumblr.com/tagged/workout It seems some of the links don’t work (the two Carmen Electra ones I clicked on said they were not valid) but some definitely do!  She also has links for workout printables for a bunch of workouts so I’m pretty sure everyone can find something to do here!

I did the Tone It Up Bikini Abs and Thighs Workout because I bought a yoga ball to help stretch my back after studying all day and figured I might as well use it!

With as sore as I’m already feeling, I’m sure I’ll be hurting tomorrow but that’s a good thing.  I enjoyed the workout so I’ll definitely be doing it again.  I hope I’ll see results!!

Blueberry Cinnamon Rolls

I’ll be playing catch-up for a while because I’ve been too busy to post lately!

During bar prep (read: the most exhausting, stressful three months a human can ever go through), my poor boyfriend essentially took over all the cooking at both of our apartments.  Once I finished, I could do more of the cooking and decided to treat us both to some blueberry cinnamon rolls!

A couple notes about this recipe:

1. I’m a very visual person so I would have loved having pictures during the recipe.  It is a lot easier for me to see if I’m doing something right when I can see how it is supposed to look so that probably would have helped with the issues I had making these.

2. Time management isn’t my strongest suit and I attempted to make them the night before, which turned into basically an all night fiasco.  TIP: read the entire recipe before you start, then if you have to do a lot of waiting for things to set up, you’re not up until 3a.m.

Like I said, I was up all night making these so a lot of it could have been my own errors.  I also used brown sugar instead of white sugar in the batter (I had a lot of brown sugar on hand).  The biggest problem I had was that my filling seemed super runny so it was really hard to actually roll the cinnamon rolls.  This was definitely a HUGE mess in the kitchen.  Apparently, because the filling was so runny, they didn’t cook all the way in the oven.  I was worried I was going to burn the tops so I couldn’t cook them longer and then the very center was almost raw.

On the positives, they are ABSOLUTELY AMAZING.  I’m really glad I used brown sugar instead because I think they would have been too sweet for me with that much white sugar.  Plus, the recipe makes so much there were a ton of leftovers!  Once we microwaved them to heat them back up it cooked through the rest of the way so they were actually better as leftovers.

The frosting, which is the only place I used white sugar, was soooo gooey and yummy

 

Even though mine were so messy, they still looked pretty good if I do say so myself!

 

Peach Caprese Salad

Summer in San Diego is – while gorgeous – hot!  What better way to stay cool than with a refreshing salad. 

I get bored with normal salads so I like trying new recipes.  This one was super easy, super quick, and super delicious!

 

Basically all you have to do is chop up a couple of peaches and some mozzarella cheese.  Then tear up some basil leaves and sprinkle with olive oil, salt, and pepper.  The first time I made this I think I added too much olive oil and salt but I made it again over the weekend for me and the boyfriend and it turned out much better!  Trial and error right?

Hi!  I’m Amanda and I live in San Diego, CA.  After finishing college, going straight into law school, graduating, studying for the Bar, and somehow making it through those torturous three days…I finally have some free time on my hands! I’ve developed a serious addiction to Pinterest (everyone needs study breaks) and decided I should finally start doing something about the gazillions of pins I have.  My friends convinced me I should blog about it so here I am!
